Instructions
- Prepare Oven:
- Preheat oven to 180°C (350°F).
- Cook Noodles:
- Cook ramen noodles in boiling water for 2 minutes less than package instructions. Drain and set aside.
- Make Meat Sauce:
- Heat vegetable oil in large skillet over medium heat. Add onion, garlic, and ginger, sauté until fragrant and translucent, about 3 minutes. Add ground pork, brown and break up with spoon. Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season and simmer for 10 minutes to thicken slightly.
- Mix Cheese Layer:
- In bowl, combine ricotta cheese, egg, half mozzarella, and half parmesan.
- Assemble Lasagna:
- In 22x30 cm baking dish, spread thin meat sauce. Add layer of ramen noodles (approx. one pack), spread third of ricotta mixture, top with third of meat sauce. Repeat layers two more times, finish with remaining meat sauce.
- Add Cheese:
- Sprinkle remaining mozzarella and parmesan over top.
- Bake:
- Cover with foil, bake for 20 minutes. Remove foil and bake 10-15 minutes until cheese bubbles and lightly golden.
- Serve:
- Let stand 10 minutes before slicing. Garnish with green onions if desired.
