A bold and inventive fusion dish that layers ramen noodles, spicy ground pork, tangy tomato sauce, and creamy cheese for a comforting, flavor-packed meal.

I first tried making this when I wanted something cozy but out-of-the-box. Ramen lasagna quickly became a surprise hit at home and now it's requested repeatedly for weekend dinners.

Ingredients

  • Noodles: 4 packs ramen noodles (instant, 85 g each, discard seasoning)
  • Meat Sauce: 500 g ground pork (or ground chicken or beef), 2 tbsp vegetable oil, 1 medium onion (finely chopped), 3 cloves garlic (minced), 2 tbsp ginger (grated), 2 tbsp gochujang (Korean chili paste), 1 tsp crushed red pepper flakes (adjust to taste), 1 can (400 g) crushed tomatoes, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, salt and pepper to taste
  • Cheese Layer: 250 g ricotta cheese, 1 large egg, 100 g mozzarella cheese (shredded), 50 g parmesan cheese (grated), 2 green onions (thinly sliced for garnish, optional)

Instructions

Prepare Oven:
Preheat oven to 180°C (350°F).
Cook Noodles:
Cook ramen noodles in boiling water for 2 minutes less than package instructions. Drain and set aside.
Make Meat Sauce:
Heat vegetable oil in large skillet over medium heat. Add onion, garlic, and ginger, sauté until fragrant and translucent, about 3 minutes. Add ground pork, brown and break up with spoon. Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season and simmer for 10 minutes to thicken slightly.
Mix Cheese Layer:
In bowl, combine ricotta cheese, egg, half mozzarella, and half parmesan.
Assemble Lasagna:
In 22x30 cm baking dish, spread thin meat sauce. Add layer of ramen noodles (approx. one pack), spread third of ricotta mixture, top with third of meat sauce. Repeat layers two more times, finish with remaining meat sauce.
Add Cheese:
Sprinkle remaining mozzarella and parmesan over top.
Bake:
Cover with foil, bake for 20 minutes. Remove foil and bake 10-15 minutes until cheese bubbles and lightly golden.
Serve:
Let stand 10 minutes before slicing. Garnish with green onions if desired.

This quickly became a new birthday tradition for my brother—we all dig in and debate whether it's more ramen or more lasagna. Everyone cleans their plate every single time!

Notes

Try ground chicken or turkey for lighter version. Add mushrooms or spinach between layers for extra vegetables. For a bigger kick, drizzle with chili oil before serving. This pairs well with a crisp lager or lightly chilled red wine.

Ricotta, mozzarella, and parmesan create a creamy, melty, and savory profile that balances the spicy meat sauce.

How can I add vegetables to this dish?

Sautéed mushrooms, spinach, or bell peppers can be layered between noodles and sauce for extra flavor and nutrition.

What sides pair well with this fusion dish?
