# What You'll Need:

→ Chicken

01 - 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
02 - Salt and freshly ground black pepper to taste
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - ½ teaspoon smoked paprika

→ Sauce

06 - ½ cup BBQ sauce
07 - ¼ cup honey

→ Rice & Vegetables

08 - 1 cup long-grain white rice, rinsed until water runs clear
09 - 2 cups chicken broth, low sodium recommended
10 - 1 cup mixed vegetables (bell peppers, peas, carrots; fresh or frozen)

# How to Make It:

01 - Pat chicken pieces dry with paper towels. Season generously with salt, pepper, garlic powder, onion powder, and smoked paprika, tossing to coat evenly on all sides.
02 - Heat a large skillet or sauté pan over medium-high heat. Add a drizzle of oil if the pan is not non-stick. Add seasoned chicken in a single layer and sear for 4–5 minutes per side until golden brown with a nice crust. Remove chicken from pan and set aside.
03 - In a small bowl, whisk together the BBQ sauce and honey until smooth and fully combined.
04 - Return the chicken to the pan. Pour the honey BBQ mixture over the chicken and stir to coat every piece evenly. Let cook for 1 minute to meld flavors.
05 - Add the rinsed rice to the pan, stirring to coat with the sauce mixture. Pour in the chicken broth and stir gently to distribute the rice evenly. Bring to a simmer over medium heat.
06 - Once simmering, reduce heat to low. Cover tightly with a lid and cook for 15 minutes, allowing the rice to absorb most of the liquid.
07 - Scatter the mixed vegetables evenly over the top of the rice. Do not stir. Cover again and continue cooking for 5 more minutes until rice is tender and liquid is fully absorbed.
08 - Remove from heat and let stand, covered, for 5 minutes. This allows the rice to finish steaming and become fluffy. Fluff gently with a fork, incorporating the vegetables, and serve hot.

# Additional Tips::

01 -
  • The honey BBQ sauce creates this incredible sticky glaze that makes the chicken taste like it came from a restaurant kitchen
  • Everything cooks in one pan so you spend exactly zero minutes scrubbing multiple pots afterward
  • My picky niece actually asked for seconds and she has declared herself a vegetable hater since 2019
02 -
  • The liquid will look like too much when you first add it but trust the process and resist the urge to peek while it simmers
  • That rest period at the end is absolutely crucial for the rice to finish absorbing moisture and become perfectly tender
  • If you are using brown rice, increase both the broth amount and the cooking time or you will end up with crunchy disappointment
03 -
  • A heavy-bottomed pan or cast iron skillet distributes heat more evenly and prevents the rice from sticking
  • Room temperature chicken sears more evenly than cold straight from the fridge
