20 - 8 small corn or flour tortillas (soft taco size), or

# How to Make It:
01 - In a mixing bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang. Add sliced beef, chicken, or tofu. Toss thoroughly to coat and allow to marinate for 15 to 20 minutes.
02 - In a blender or food processor, combine cooked ube, sour cream or yogurt, lime juice, honey, and a pinch of salt. Blend until smooth and vibrant. Refrigerate until ready to serve.
03 - Heat a skillet or grill pan over medium-high. Add marinated protein and cook for 4 to 6 minutes, stirring occasionally, until well browned and fully cooked. Remove from heat and set aside.
04 - Heat tortillas in a dry skillet or microwave until soft and flexible. For bowls, fluff the cooked jasmine or sushi rice with a fork.
05 - Spread ube crema on each tortilla. Layer with cooked protein, then top with kimchi, shredded cabbage, sliced cucumber, jalapeño, cilantro, toasted sesame seeds, and pickled red onions. For bowls, start with rice, add protein and toppings, and finish with a drizzle of ube crema.
06 - Offer immediately, allowing guests to customize tacos or bowls to their preference.
