Layered crackers with cheddar, Swiss cheese, cucumber, carrot, bell pepper, and olives for a fun, colorful snack tower.
# What You'll Need:
→ Crackers
01 - 20 rectangular whole-grain crackers
→ Cheese
02 - 8 slices cheddar cheese
03 - 8 slices Swiss cheese
→ Fruit & Vegetables
04 - 1 large cucumber
05 - 1 large carrot
06 - 1 yellow bell pepper
07 - 16 black olives, pitted
→ Extras
08 - 2 tablespoons cream cheese
09 - 8 fresh chive stems
# How to Make It:
01 - Wash and peel the cucumber and carrot. Cut the cucumber into thin, long strips. Cut the carrot into thin matchsticks. Slice the yellow bell pepper into thin strips.
02 - Lay out one cracker as the base and spread a thin layer of cream cheese on top.
03 - Place a slice of cheddar cheese over the cream cheese, followed by a few cucumber strips and a couple of carrot matchsticks.
04 - Top with another cracker, spread a thin layer of cream cheese, then add a slice of Swiss cheese, some bell pepper strips, and two olive slices.
05 - Repeat the layering process, alternating cheeses and vegetables, until a stack of five crackers is created.
06 - Insert a chive stem along the side of the stack to resemble a giraffe’s neck. Place an olive slice at the top as the head and two small carrot pieces as ossicones (horns).
07 - Secure the stack with a toothpick if needed and repeat to assemble a total of four stacks.
08 - Serve immediately to maintain optimal texture.
