- Preheat the oven to 425°F or heat olive oil in a large skillet over medium-high heat.
- Combine honey, hot sauce, and red pepper flakes in a small saucepan. Warm gently over low heat just until runny. Remove from heat and set aside.
- Pound chicken pieces to an even thickness. Season both sides generously with salt, freshly ground pepper, garlic powder, and smoked paprika.
- Set up three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs.
- Gently press crumbled feta onto each chicken piece. Dredge in flour, dip in beaten egg, and firmly press into panko to thoroughly coat.
- For oven method, arrange breaded chicken on a lined baking sheet and drizzle lightly with olive oil. Bake for 20–25 minutes or until golden, crisp, and fully cooked. For skillet method, cook chicken 3–4 minutes per side until golden brown and cooked through.
- Transfer chicken to plates and drizzle generously with warm hot honey. Serve immediately, accompanied by rice, salad, or roasted vegetables.
