Cottage Cheese Chocolate Mousse (Print Version)

A creamy mousse combining cottage cheese, cocoa, and chia seeds for a smooth, protein-rich indulgence.

# What You'll Need:

→ Base

01 - 2 cups cottage cheese, full-fat or low-fat
02 - 3 tablespoons high-quality cocoa powder
03 - 2 tablespoons melted dark chocolate, 90% cocoa minimum
04 - 1/4 cup syrup, honey, or sweetener of choice
05 - 1/4 cup chia seeds

→ Toppings

06 - Chopped dark chocolate, optional
07 - Chocolate chips, optional

# How to Make It:

01 - Add cottage cheese, cocoa powder, melted dark chocolate, syrup or sweetener, and chia seeds to blender or food processor.
02 - Blend for approximately 2 minutes until mixture achieves completely smooth, creamy, and light consistency. Scrape sides as needed.
03 - Divide mousse evenly among 4 small cups or ramekins.
04 - Top each portion with chopped dark chocolate, chocolate chips, or fresh berries as desired.
05 - Refrigerate for minimum 3 hours until set and mousse-like in texture.
06 - Remove from refrigerator and serve cold.

# Additional Tips::

01 -
  • Protein-packed enough that you won't feel guilty eating it straight from the fridge at 10 PM.
  • It takes five minutes to throw together when you desperately need chocolate but don't have energy for actual baking.
  • Tastes decadent despite being something you could literally eat post-workout without overthinking it.
02 -
  • Under-blending is the biggest mistake I made repeatedly until someone finally told me it matters, so blend longer than feels necessary and your texture will be genuinely creamy instead of gritty.
  • Cold straight from the fridge is the only acceptable serving temperature because room temperature mousse loses all its appeal and becomes sad pudding.
03 -
  • Room temperature cottage cheese blends smoother than cold straight from the fridge, so set it out while you're gathering other ingredients and save yourself blending frustration.
  • If your mousse ends up too thick after chilling, a splash of milk or plant-based alternative loosens it back up without ruining anything.
